Here are a list of legal (non-whitelisted) jobs and how they work.

Trucking
To start a trucking job, open your phone via F1 and click on the Job Centre App (
). Scroll down to Trucking and select it. You will need to have your CDL (Commercial Drivers License) before you can start a job.
Once you've selected the job, head down to the Trucking depot 
. Make sure you are right at the icon, as that is where the starting point is. You will see a white rotating truck icon, go up to it and you will receive a prompt to press E. The jobs are randomized and you will then be put into a truck where you will receive a GPS marker to go pickup your cargo. Drive up right behind it and it will hitch automatically to your truck.
When you are in the truck, you will have access to the CB radio where you can communicate with other truckers. You have the option to turn it off at the start by pressing E.
From there, you will receive a GPS marker to the location of your drop-off. Once you arrive to the location, you will see a yellow circle. Drive into the circle so your cargo is right in the middle and press H to unhitch it. The cargo will disappear, and you will have a prompt take the truck back with a GPS marker. Park the truck in the yellow circle and get out. After that, you will receive your payment. Each job pays differently depending on distance.
Having a suspended license will prevent you from starting a trucking job. Watch your driving.
GoPostal
To start a GoPostal job, open your phone via F1 and open the Job Centre App (). Scroll down to GoPostal and select it. You will need a standard drivers license from the DMV in order to do GoPostal.
Once you've selected the job, head to the GoPostal Depot (
). To unlock the gates, press E. By the building, you will see a ped in a GoPostal uniform that you can use your left alt muscle to start a delivery run. You will then be put into a Boxville van where you will receive a GPS marker to your first drop-off. The run consists of around 12-15 drop-off locations. Drive safely though, as any damage done to the vehicle will result in a small deductible from your payment.
After you dropped off your last package, you will receive a message instructing you to return to the depot. There will be a yellow circle at the depot where you return your work vehicle to and receive your payment.
Having a suspended license will prevent you from starting a GoPostal route. Watch your driving.

Hunting
To start Hunting, open your phone via F1 and click on the Job Centre app . Scroll down to Hunting and select it.
Head up to the Hunting Lodge 
. Enter the building and you will see a ped by the counter. Use your left alt muscle and a menu will pop up. From there, you can rent a knife to use and purchase a Hunting license.
After that, head to the hunting zone
. Once you enter the hunting zone, you will receive the hunting rifle. Press 'G' to use the elk whistle. Once you've done so, a red circle will appear where the animal is. Find the animal and shoot it. Make sure to have your knife out when walking up to the carcass. You will receive a prompt to skin the animal. The condition of the leather will depend on where you shoot the animal.
When you're ready to sell your items, head to the selling point 
. You will see a white circle by a door, walk up to it and you will receive a prompt to sell your items.

Thermal Optics |
Dogwalking
To start a dog walking job, open your phone via F1 and click on the Job Center app (). From there, navigate to Dog walking and select it. Use F6 and a menu will pop up, giving you an option to 'Get a job'.
Once you've started a job, you will get a GPS location to a house where the dog will await you. Walk the dog in a straight line from the house. Walking the dog around the block will not work. The dog will eventually do it's business and you'll receive a message at the top left of your display telling you to take the dog back home where you will receive payment.
Dogwalking is a gig job and can only be done from 9AM to 5PM in-game (local) time.

Sunset Bleach
To start a Sunset Bleach job, open your phone via F1 and click on the Job Centre app (). Scroll down to Sunset Bleach and select it. Use F6 and a menu will popup giving you an option to 'Get a job'.
Once you've started a job, you will receive a GPS marker to the location of your job. You will have a yellow dot exactly on the entry point for your job. There will be a green circle at the door and you will receive a message at the top left of your display telling you to Press 'G' to enter.
After you've entered the house or building, follow the prompts, pickup the trash bag and look around for trash to pickup. Once you've collected all the trash, you will receive a message to drop off the trash bag at the door.
Next, pickup the mop and find dirty spots on the floor to mop. Make sure to look very carefully as sometimes the mess can blend in with the floor. You'll receive a message to return the mop to the bucket once everything is mopped up. Finally, you return to the door to exit out and receive your payment. Payout varies between the size of the building/house.
Sunset Bleach is a gig job and can only be done from 9AM to 5PM in-game (local) time.
LSDWP (Electrician)
To start a Electrician job, open your phone via F1 and open the Job Centre App . Scroll down to 'Department of Water and Power' and select it.
Once you've selected the job, head to the LSDWP depot 
. Enter the building and you will see a Ped wearing a construction outfit. Use your left alt muscle and you will see an option to start a run.
After that, you will be put into a Boxville van. On your mini map, you will see 5-7 triangle blips. Head to them and you will find an electrical box. Walk up to it and you will receive a prompt to open the box. From there, you will have to do a hack in order to repair it. Failure to complete the hack will result in a small deductible for that box when your receive your payment in the end. Be careful, when you fail a hack there is a small chance that you will be electrocuted.
Once you've completed all the stops, return to the LSDWP depot. There will be a yellow circle in the front where you can return your van and receive your payment.

Los Santos Department of Sanitation
To start a start a Sanitation job, open your phone via F1 and click on the Job Centre App . Scroll down to 'Los Santos Department of Sanitation' and select it.
Once you've selected the job, head to the Sanitation depot 
. Go inside the building, and you will see a yellow circle behind a desk. Walk up to it and select 'Clock in'. From there, another circle will appear at the front door. Walk up to it and select it, you will be able to get your trash truck.
You will then receive a waypoint to your first stop. Drive to that location and you will see a yellow circle surrounding your designated trash bin. Back your truck up so your back end faces the trash bin. Get out of your vehicle and being collecting trash. Press E to pick up a bag, and then 'E' again to place it into the trash truck. You will receive a message to get back into your truck once you've collected the necessary trash for the stop along with payment. You will then receive another marker for your next stop. Repeat the process above. There is 10 stops per run.
Once you've completed all the stops, you will be directed to return the truck back to the depot. You will see a red truck icon 
on your map of where the truck needs to be delivered. Once you get to the location, there will be a circle. Drive your truck inside it and press E to return it.
Note: This job can be done with friends! Payment will split whether you decide to split picking up the bags.
